Ingredients:
~ 1 large pumpkin, diced (about 4 cups)
~ 1 large sweet potato, white, coarsely chopped
~ 2 cloves of garlic
~ 2 tablespoons of olive oil
~ 1 medium onion, coarsely chopped
~ 3 cups chicken or vegetable broth
~ Salt and pepper
~ 1 tablespoon, ginger powder or less to taste
~ A pinch of nutmeg
~ Cream, yoghurt, parmesan or whatever you want to serve
~ A sprinkle of roasted pumpkin seeds or sunflower seeds for serving
Execution:
~ Heat a saucepan over the stove and add the oil. Sauté the onion and once it is shiny, add the pumpkin, sweet potato and garlic.
~ Stir and add the broth. Season with salt and pepper and simmer for 20 minutes.
~ Add the ginger and continue cooking for another 10 minutes. Close the pot and allow it to cool.
~ Puree it in the multi and transfer it back to the pot. Sprinkle with the nutmeg and bring to a boil. Divide into plates, sprinkle with freshly ground salt and pepper and serve immediately.
