Materials
~ 100 g. raisin
~ 100 g. dried cranberries
~ 100 g. plums
~ 20 g. cognac
~ 20 g. Water
~ 180 g. brown sugar
~ 240 g. cow butter at room temperature
~ 5 eggs
~ 200 g. Farin Ap
~ 1 pinch of salt
~ 1 teaspoon of cinnamon
~ 10 g. butter and 20 g. flour for moulding
Execution
1) In a food processor, add the raisins, cranberries, plums, cognac and water and pulse until pureed.
2) In a mixer, beat the butter and sugar with the paddle attachment until fluffy and white.
3) Add the eggs one by one and continue beating for 2-3 minutes.
4) Add the Farin A, salt and cinnamon and beat until it becomes a uniform dough.
5) Add the dried fruit and beat for another minute.
6) Grease and flour a round baking pan and pour the dough.
7) Bake in a preheated oven for 20 minutes at 190oC and for another 20 minutes at 170oC. Test if the cake is ready by plunging a knife into the centre of the cake. If it comes out clean, take it out of the oven.
8) Allow it to cool for 10 minutes and remove from the pan. Allow another 15 minutes on a wire rack to cool thoroughly.
